Masala Cookies

We’ve all heard of chocolate chip cookies, fudge cookies and all sorts of sweet cookies. Today I’ve made some Masala Cookies, yes MASALA!

After making numerous sweet dishes for Diwali, I thought let’s make something that I could enjoy with a hot cuppa. These cookies are made with plain flour, spices, yogurt and butter. They are salty and spicy with a hint of sweetness. It’s also a healthier baked option compared to the deep fried traditional Diwali snacks that we usually eat.

Plain flour – this is regular all purpose flour.
Butter – unsalted preferably, you’ll need this as a main ingredient along side with the flour. This is what makes the cookies so soft and keeps them moist.
Yogurt – greek full fat which is nice and creamy.

I made two batches in the afternoon, so it’s really easy to put together. I used a biscuit mould for this, there is an option to roll out the dough and use a cookie cutter.

  1. Mix all the ingredients together in a bowl.
  2. Knead dough for about 2-3 minutes. All the spices should be mixed into the dough so you can see it throughout.
  3. Preheat your oven to 180°C
  4. Keep the dough in the fridge for at least 20 minutes.
  5. After taking out of the fridge, knead again for a minute.
  6. Either make round balls from the dough and flatten slightly, then place on a baking tray. Or roll the dough out on a floured surface and use a cookie cutter to make shapes.
  7. Place all the cookies on a tray and bake for 20 minutes (middle shelf).
  8. Once the cookies have slightly browned in colour, remove and let them cool completely.
  9. Keep in an airtight container for up to 5 days.
