This recipe is often made in my kitchen and goes down well with the family. Rice dishes very easy to cook if you have a fast cooker like the Instant Pot or Pressure King Pro.

- 2 cups rice soaked and washed
- 300 grams prawns washed and deveined
- 2.5 cups water
- 1 onion medium sized
- 1 pepper any colour
- 2 teaspoons chilli, ginger and garlic paste
- 50 g creamed coconut one small sachet
- 2 teaspoons salt or to taste
- 1 tablespoon garam masala
- 1 tablespoon curry powder medium/mild spice level
- pinch saffron
- 2 teaspoons turmeric
- 1 potato medium sized, seasoned with a pinch of curry powder
- 3 tablespoons sunflower oil or any cooking oil
- 2 each cardamon, cinnamon sticks, bay leaves & cloves
- coriander OPTIONAL to garnish at the end

- Warm your Instant Pot / Pressure King Pro on saute/fry mode
- Add oil and cardamon, cinnamon sticks, bay leaves and cloves
- Add onions and let them cook for about 40 seconds (don’t overcook or they will disappear in the ‘fast pressure mode’
- Add 1 teaspoon of salt (keep the remainder for later)
- Add peppers and slightly stir fry for 20 seconds (again, don’t overcook)
- Add the garlic, ginger and chilli paste and mix well
- Add the turmeric and mix well
- Add the curry powder followed by the garam masala and give it a good mix
- The ingredients cooking may start to stick so add 1/2 cup of water into the pot
- Add prawns to the pot and mix
- Add the potatoes into the pot, followed by the creamed coconut
- Add rice, saffron and salt
- Reminder of 2 cups of water and give it all a final mix
- Turn off the saute/fry mode
- Carefully close the lid (turn the vent to sealing to prevent steam from escaping) and set the pot to ‘MANUAL/PRESSURE COOKER mode' and set the time for 5 minutes
- After 5 minutes, let the pressure naturally release from the pot
- Be very careful opening the lid and please make sure all the pressure has escaped from the pot
- Serve with a sprinkle of coriander
Spice level: Medium to Hot
To reduce the level of spice, half the amount of chilli, ginger and garlic paste and garam masala. This will give you a mild Prawn Biryani.
