Egg free Banana Loaf

A warm loaf of banana bread and a cold glass of milk, can bring a smile to any face. This egg free recipe is, like many of my recipes, child friendly. I always try to minimise the amount of granulated sugar in my baking and replace it with honey, a healthier alternative.

It is tough to find egg free baking recipes, some have so many ingredients in there, this ones alot more simple and most of the things you will find in your kitchen cabinet. The riper the bananas the better, the loaf will taste sweeter naturally. It can be stored in the fridge for upto 5 days. You can even warm it slightly and add some butter to the top, almost tastes like its come out of the oven again. Try adding some cinnamon to the recipe, cinnamon compliments bananas very well. Chocolate chips sprinkled on top is also another favourite, I try to keep my kids away from that at home but feel free to try and let us know how it turns out.

Instructions
  1. Pre heat oven to 180 degrees
  2. Chop and mash the bananas in an electric whisk or using a fork
  3. Add the vanilla, oil and honey to the mashed bananas and whisk again
  4. Sieve flour, salt, baking powder, baking soda directly into the mashed banana bowl
  5. Slowly fold the mixture together making sure it is evenly mixed
  6. Add in walnuts (optional) into the batter
  7. Pour the batter into a greased (with any oil) loaf pan roughly 7.5 x 4 x 2.5 inches
  8. Bake in the oven 180 degrees for 45-50 minutes or until toothpick comes out clean
  9. Enjoy with a glass of milk!
