These classic windowed biscuits make a lovely treat for the festive season. The dough is similar to shortbread, very crisp and buttery. I used marmalade which is popular for us Brits, (orange jelly for US). You can make these vegan by subbing the butter for vegan butter. Just make sure the marmalade is vegan friendly.
Ingredients:
125g butter – opt for vegan butter optional
125g plain flour
70g rice flour
60g caster sugar
50g thin cut marmalade (Orange jam) – option to choose any jam filling
This recipe makes 12-15 biscuit sandwich stars.

- Pre heat oven to 160°C (320°F) and prepare two baking trays lined with parchment paper.
- In a bowl combine the softened butter and sugar until fluffy.
- Add rice flour and mix again.
- Then add plain flour and keep mixing until the dough is formed, you may need to use your hands. The dough will turn into a crumbly texture.
- Split the dough into 2 parts. With the first part, on a floured surface, make a ball and roll out the dough to the thickness of a £1 coin. Cut star shapes, and repeat the process until your first part of dough is all used up. Keep placing the shapes into your prepared baking tray.
- With the second part, we are going to make window biscuits, top layer which will show the marmalade insert. On a floured surface roll the dough. Make star shapes again and place on the second baking tray. With a smaller star shape cut into the stars. This will create the windows we need for the marmalade filling. Carefully remove the centres (you can bake these too). Be very gentle, the dough is very soft at this point.
- Bake in the oven for 10-12 minutes, with the whole stars on the upper shelf and the cutout 'window' stars on the lower shelf. Keep an eye on the stars, keep them fairly pale. Remove and place on a cooling rack.
- Once the biscuits are completely cool, spoon around small teaspoon marmalade onto each of the whole stars.
- Then take the window stars and place on top gently. Option to sprinkle some orange zest on top of the marmalade and some icing sugar on top of the starts.
