A veggie alternative to traditional pigs in blankets. This works perfectly as a side to your main meal or as a starter! I’ve used aubergine instead of the bacon and halloumi instead of the sausages. These are so tasty and satisfying. With the flavours of orange and basil coming through, you’d want to make these over and over again!
Ingredients:
2 small aubergines sliced thinly
A glug of olive oil
9 halloumi sticks
1 tablespoon honey
½ orange zest
½ orange juice from a fresh large orange
½ teaspoon chilli flakes
Handful of basil leaves, chopped and some for garnishing

- 2 small aubergines sliced Make sure these are sliced thinly so they can be wrapped around the halloumi sticks.
- glug olive oil For cooking aubergines and for the halloumi
- 9 sticks halloumi Take a large block and slice them into sticks
- 1 tablespoon honey
- ½ orange zest from a large orange
- ½ orange juice from a large orange
- ½ teaspoon chilli flakes
- handful basil chopped and some for garnishing

Instructions
- Heat a griddle with some oil and cook the aubergine on both sides. Remove when they are slightly soft and cooked through. Set aside
- Pre-heat oven to 180°C (350°F)
- In a bowl add halloumi sticks, olive oil, orange zest, basil, chilli flakes, honey and orange juice. Mix well to combine.
- Taking each piece of aubergine, wrap it around the halloumi stick. Repeat the process until all done.
- On a lined baking tray, add all prepared sticks and bake in the oven for 10-12 minutes.
- Remove from the oven and enjoy whilst warm!
