Line a square baking tray with parchment paper and set aside.
In a large mixing bowl add the desiccated coconut (preferably unsweetened). Add your melted coconut oil and maple syrup (or sticky sweetener of choice) and mix until combined. If it is too crumbly, add a little extra syrup or a tiny bit of water. The mixture should be a sticky thick batter.
Pour the mixture into your pre-prepared lined pan and press firmly. Refrigerate or freeze until firm.
In a small bowl, melt your dark chocolate and drizzle over the frozen mixture. Cut the bars into desired size, and enjoy!
