Quinoa Crunch Bars
Instructions
  1. Wash, drain and fully dry your quinoa.
  2. Heat a heavy bottomed pot over medium heat. After 1 minute add the quinoa.
  3. Keep swirling the pan and you’ll start to hear light popping. Swirl it constantly for about a minute until the popping has subsided slightly. Make sure you take it off before it gets brown (this can happen super fast). You’re aiming to get a light golden look.
  4. Once all your quinoa is popped, set aside in a bowl.
  5. Prepare a loaf tray with parchment paper and set aside.
  6. Melt chocolate in a pan on low heat and add coconut oil.
  7. Once the chocolate has melted turn off the heat and add the stevia vanilla drops. Followed by the popped quinoa. Mix to fully combine.
  8. Spread the chocolate quinoa mix into the pre-prepared baking tray. Give the tray a little shake to even out the mixture.
  9. Let it cool at room temperature for 10-15 minutes then move over to the refrigerator for at least 2-3 hours before slicing.
  10. Keep refrigerated in an air tight container and enjoy chilled.
