Keto macadamia nut dark choc cookies

This classic festive cookie goes Keto! Low carb and full of nutty delight! Try these out!

Ingredients:
160g almond flour – ground almonds
128g dark chocolate – chopped roughly
90g sweetener – I used erythritol and stevia blend
1 egg
64g butter – softened
64g macadamia nuts – chopped roughly
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon xanthan gum

This recipe is low carb and gluten free (using gf baking powder).

Makes 16 cookies.

Instructions
  1. Pre heat oven to 180°C (350°F)
  2. In a bowl combine the sugar, butter and vanilla extract
  3. Add the egg and mix well
  4. Then add the almond flour, baking powder and xanthan gum. Mix all the ingredients together
  5. Add the chocolate chips and dark chocolate and mix together. Your dough is ready to be refridgeraed for 30 minutes.
  6. Once the dough has been cooled, line a baking pan with parchment paper.
  7. Using a ice cream scoop, scoop out the dough one by one and place on baking tray. The dough makes 16 medium cookies.
  8. Bake in the oven for 15-20 mins. Let them cool completely before enjoying!
