This classic festive cookie goes Keto! Low carb and full of nutty delight! Try these out!
Ingredients:
160g almond flour – ground almonds
128g dark chocolate – chopped roughly
90g sweetener – I used erythritol and stevia blend
1 egg
64g butter – softened
64g macadamia nuts – chopped roughly
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon xanthan gum
This recipe is low carb and gluten free (using gf baking powder).
Makes 16 cookies.

- 90 g sweetener I used erythritol and stevia blend
- 1 medium egg
- 64 g butter softened
- 64 g macadamia nuts chopped roughly
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum

Instructions
- Pre heat oven to 180°C (350°F)
- In a bowl combine the sugar, butter and vanilla extract
- Add the egg and mix well
- Then add the almond flour, baking powder and xanthan gum. Mix all the ingredients together
- Add the chocolate chips and dark chocolate and mix together. Your dough is ready to be refridgeraed for 30 minutes.
- Once the dough has been cooled, line a baking pan with parchment paper.
- Using a ice cream scoop, scoop out the dough one by one and place on baking tray. The dough makes 16 medium cookies.
- Bake in the oven for 15-20 mins. Let them cool completely before enjoying!
