Instructions
  1. Preheat the oven to 180°C or 350°F. Line a baking tray with parchment paper, set aside.
  2. Place the dark chocolate in a microwavable bowl and melt.
  3. Place the flour, cocoa, bicarbonate of soda and salt into a large bowl and mix well.
  4. In another bowl, cream the butter, brown and caster sugars together until light and fluffy. Add the melted chocolate and stir well.
  5. Beat in the vanilla extract and crack in the egg, then mix in the dry ingredients. Finally stir in the chocolate chips.
  6. Scoop out 8-10 portions of the mixture and place onto the prepared baking tray.
  7. Bake for 12-15 minutes, then test with a skewer - it should come out semi-clean with no wet batter.
  8. Transfer cookies onto a cooling rack and carefully push in a few white chocolate chips into each cookie. Let the cookies cool and enjoy!
