These outrageously Intense Dark Chocolate Cookies melt in your mouth, deep rich chocolate with a boost of yumminess!

Ingredients
- 350 g dark chocolate chips
- 150 g plain flour
- 125 g dark chocolate
- 125 g unsalted butter
- 50 g light brown sugar
- 50 g caster sugar
- 30 g dark cocoa
- 1 teaspoon bicarbonate of soda
- 1 teaspoon vanilla extract
- 1 medium egg
- ½ teaspoon salt
- handful white chocolate chips

Instructions
- Preheat the oven to 180°C or 350°F. Line a baking tray with parchment paper, set aside.
- Place the dark chocolate in a microwavable bowl and melt.
- Place the flour, cocoa, bicarbonate of soda and salt into a large bowl and mix well.
- In another bowl, cream the butter, brown and caster sugars together until light and fluffy. Add the melted chocolate and stir well.
- Beat in the vanilla extract and crack in the egg, then mix in the dry ingredients. Finally stir in the chocolate chips.
- Scoop out 8-10 portions of the mixture and place onto the prepared baking tray.
- Bake for 12-15 minutes, then test with a skewer - it should come out semi-clean with no wet batter.
- Transfer cookies onto a cooling rack and carefully push in a few white chocolate chips into each cookie. Let the cookies cool and enjoy!
