Keto cookie squares – peanut butter chocolate chip
These soft delicious low carb cookie squares are filled with goodness. Like many of my recipes, one bowl and easy to put together. I used @fuel super seed peanut butter with roasted peanuts, sunflower seeds and chia seeds.
Here’s what goes in:
225g Fuel 10K Superseed Peanut Butter Pouch
85g sweetener
40g almond flour
32g greek yogurt
32g dark chocolate chips
1 tablespoon almond milk
1½ teaspoon baking powder
Pinch of salt
These treats are low carb, gluten free and the recipe makes 12 squares.

- 225 g peanut butter I used Fuel 10K Superseed Peanut Butter Pouch
- 85 g sweetener I used NKD Living's Erythritol and Stevia blend
- 40 g almond flour
- 32 g green yogurt
- 32 g dark chocolate chips
- 1 tablespoon almond milk
- 1½ teaspoon baking powder
- pinch salt

Instructions
- Preheat oven to 180°C/ 350°F. Grease an 8-inch pan, or line with parchment.
- Add peanut butter, greek yogurt and sweetener into a bowl. Give it a good mix until it’s well combined.
- Add the almond milk and mix again.
- Now, the dry ingredients almond flour, salt and baking powder into the bowl and combine well.
- Lastly, add in the chocolate chips for the final mix.
- Transfer the batter to the prepared pan. Smooth down evenly and bake 10 minutes.
- Leave the bars to cool completely before cutting, they will firm up over the hours.
