Chestnut cookies, so nutty, sweet and crumbly – yum yum yum!
Chestnuts remind me of a cold winters day, roasting chestnuts in the oven and enjoying them when Christmas is coming.
I came across chestnut flour in Whole Foods and was keen to try it. It smells divine, really rich in its flavour.
In the video you will see my little daughters helping hands, she loves to assistant in baking.

Ingredients
- 1 egg
- 1/3 cup coconut oil melted
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1 1/4 cup chestnut flour
- 1/2 teaspoon baking soda
- chopped hazlenuts optional as topping

Instructions
- Preheat oven to 170 degrees
- In a large mixing bowl, add eggs, coconut oil, honey and vanilla extract. Mix well with an electric whisk
- Add chestnut flour and mix well with the electric whisk
- Add the baking soda and stir in with a wooden spoon
- Take heaped tablespoons of the mixture and drop onto baking paper
- Cook for 10 minutes, cool and enjoy!
Recipe Notes
The cookies can brown quickly so keep a good eye on them.
