Cauliflower & Mushroom Risotto
Instructions
  1. In a food processor, pulse the cauliflower florets until it resembles small grains of rice.
  2. Heat the oil in a pan over medium heat. Add the garlic and onion cook until translucent.
  3. Add the mushrooms, cauliflower, peas, vegetable stock, black pepper and water. Cook until the cauliflower is softened and enough liquid has evaporated to make the mixture.
  4. Add the cream and parmesan then let it sit to thicken. Finish by stirring in the chives.
  5. Garnish with extra parmesan and chives.
