Avocado toast with egg

Avocado, sourdough bread and egg, what a combo. Can be eaten for brekkie, lunch or even dinner. Healthy and very filling. See my quick steps below.

  1. Coarsely mash the avocado with a fork. Mix in the lime juice, chilli flakes, salt and pepper. Cover and set aside.
  2. Bring a medium pan of water to the boil. Carefully add the eggs to the water and let the eggs boil for 10 minutes. Turn the pan off and remove the boiling water from the pan. Add cold water to the pan and allow the eggs to cool. Once the eggs are cool, peel and cut in half. Top with a pinch of salt and pepper and set aside.
  3. Toast the slices of sour dough bread and spread the mashed avocado mixture over the toast. Sprinkle some pomegranate seeds on top of the toast.
  4. Add 2 slices of boiled egg on top of the sourdough avocado toast. Serve straight away.
