Chocolate Caramel Frozen Barfi Bites

These by far the gooey-iest, most satisfying treats ever!

3 layer barfi bite – Snickers style, chocolate caramel frozen barfi bites. Yes, FROZEN. These taste the best straight out of the freezer. Be warned they are super messy, but so so worth it!

Crammed with peanuts, caramel and topped with chocolate…

The milk base is made with milk powder and a delicate saffron flavour. For the caramel I used Carnation® Caramel, it’s ready to use from the can. Makes it so much easier with baking and creating these type of treats. The chocolate is milk and dark mixed together for the best flavour and melted over a pot of boiling water. Yes and the PEANUTS, squished into the milk base, load it up as much as you like!

– The water, sugar and saffron boiled makes a syrup which binds the milk powder into a soft dough. This is the barfi base which is a traditional Indian Sweet method.
– Peanuts are placed into the soft dough.
– The Carnation® Caramel is the middle gooey layer.
– The top layer is all chocolate and holds the entire barfi bite together.

  1. Get a plate and wrap it with cling film and then grease it with ghee on top. Keep aside.
  2. Add water, saffron and sugar into a pan
  3. Let it boil for 7-8 minutes and keep stirring. You will notice the syrup getting thicker. This means the syrup is ready to use. Be very careful and try not to over cook. Keep it on medium heat.
  4. Add milk powder into a bowl and add the ghee
  5. Add a large serving spoon of syrup each time to the milk powder bowl. Keep mixing to make a silky dough. Keep adding the syrup as you need. You may have some of the syrup left over
  6. Spread the soft dough over the pre-prepared plate and smooth it out until even.
  7. Take half the can of Carnation® Caramel and spread it on top of the soft dough, do this evenly.
  8. Start to melt the chocolate in a bowl over boiling water. Once it's ready, pour all the chocolate over the Caramel layer. Move the plate around so the chocolate covers all the areas.
  9. Leave the plate to cool down and once completely cool, cut into pieces and put into an airtight container. Then transfer into the freezer. Make sure to cut them in bitesized pieces.
  10. Keep the bites overnight and enjoy the next morning! Leave the barfi bites in the freezer, they taste the best chilled!
