Biscoff Chocolate Chip Cookies | Eggless
All I heard in the summer was Lotus Biscoff, Lotus Biscoff! I tried the spread and loveeee it! So I decided to bake with it and make some – Lotus Biscoff Chocolate Chip Cookies!
These cookies are loaded with Biscoff flavour and chocolate chips – they are so heavenly! There’s no added sugar in these, just what’s in the spread and choc chips (I don’t like overly sweet cookies).
They are also totally egg free.
Ingredients you’ll need:
– 150g Self raising flour
– 100g melted butter
– 300g Lotus Biscoff Spread
– 1 tablespoon grounded flaxseed mixed with 3 tablespoons of water (check your packet for the instructions)
– Handful of chocolate chips
– Packet of Lotus Biscoff Creme for decoration (optional)

Ingredients
- 300 g Lotus Biscoff Spread You get it smooth, you may need to microwave it for 20-30 seconds
- 150 g self raising flour
- 100 g butter
- handful chocolate chips
- 6 split in half Lotus Biscoff Creme Biscuits Gently take a knife and split the sandwich cookies into one piece.
- 1 tablespoon grounded flaxseed mixed with water and set aside for a few mins. Follow your packet instructions.
- 12 chocolate chips to add in the middle of each cookie piece

Instructions
- Preheat your oven to 175 °C / 347 °F
- In a bowl add the Lotus Biscoff spread into a bowl
- Add the flaxseed in water and mix well until its combined
- Add the flour into the bowl. Mix well, you may need to use your hands. This mixture will turn really crumbly, keep using your hands to ensure the flour is combined with the spread and flaxseed well
- Add butter to the bowl and mix
- Add your handful of chocolate chips and give it a final mix
- Take small pieces of the dough and roll into a ball, add a chocolate chip in the middle, roll again and flatten into a cookie shape. The mixture will make roughly 12 large cookies. These cookies will spread out in the oven.
- Bake in the pre-heated oven for 12 minutes. Keep an eye on these, as soon as they start to brown, remove them from the oven
- Whilst the cookies are hot, get the Lotus Creme halves and squash them into the cookies. Do this as soon as they come out of the oven so they stick to the cookie
- Let the cookies cool completely! Enjoy!
