Pistachio baked goods very popular in the Middle East and recently the flavour is becoming quite trendy in boutique cafes around Central London.
I popped down to Palmers Green N13, and came across a pistachio paste by Anthap UK. This paste is perfect for cookies, rich in flavour and not overly sweet.
I tried to make these cookies with the most minimal ingredients and without any green food colouring. The colour you see is from the pistachio paste and nothing else.
More about the ingredients:
Pistachio paste – You can use any pistachio paste which has a moist texture enough to bind with flour.
Caster sugar – I used a little amount enough to add a very slight sweetness. Eliminate this if you want to avoid sugar.
Dark chocolate – I used dark chocolate becuase it compliments the pistachio flavour well. This is optional to add but it does give a nice flavour.
Pistachios – I used for decorating (optional)
These cookies bake in 12 minutes, crunchy on the outside and flavourful in the inside. Pairs well with a hot cuppa.
This recipe makes medium 15-20 cookies.

- 150 g self raising flour
- 60 g caster sugar
- 300 g pistachio paste creamy and moist in texture
- handful dark chocolate chips optional
- 15-20 pieces dark chocolate chips to place on top of cookies
- 15-20 pieces pistachio to decorate - optional
Ingredients

- Pre-heat your oven to 160°C and measure out your ingredients
- Add the Pistachio paste in a bowl
- Add caster sugar and mix, then add the egg and mix well to combine
- Add in the self raising flour and mix really well. You may need to use your hands to do the final binding. Keep mixing until all the flour is combined.
- Add a handful of chocolate chips (optional)
- Make round balls and slightly flatten them to add add a chocolate chip to the middle. Continue until all the mixture is used up.
- Put the cookies into the oven for 12 minutes.
- Let them cool completely because they will be super soft at first.
