In celebration of #nationalcookieday &#nationalbiscuitday I’ve put together a special recipe –
Jalebi Shortbread Biscuits
Jalebi is a deep fried flour pretzel which is soaked in sugar syrup. It’s popular over South and Western Asia.
I’ve used pieces of jalebi in this recipe so it tastes like you’re eating the real thing but in a shortbread biscuit!
Ingredients
128g plain flour
70g of chopped jalebi – these can be found in any Indian sweetmart.
64g butter – needs to be soft but not runny
55g caster sugar – or icing sugar
My recipes makes 12 medium biscuits and baked in 12 minutes.

Ingredients
- 128 g plain flour
- 70 g Jalebi pieces chopped
- 64 g unsalted butter softened
- 55 g caster sugar or icing sugar

Instructions
- Pre-heat oven to 180°C / 350°F and line your baking tray with greaseproof paper/parchment paper
- In a mixing bowl add the softened butter and sugar. Mix well until combined
- Then add the jalebi pieces and mix again
- Add flour to the bowl and combine all the ingredients together. It will turn into a sticky mixture so try not to over mix. Just until the flour disappears.
- Using two spoons scoop the mixture onto the pre-prepared baking tray. You should get 12 scoops of dough in total
- Bake in the oven for 12 minutes or until edges slightly brown.
- Let them cool well and enjoy!
