These mini oven roasted carrots are the perfect side to your roast this festive season. Incredibly delicious with flavours to take it to a whole new level.

Ingredients:
237g mini carrots – I got these from Sainsburys. If you can’t get hold of them, just use regular sized ones and slice into small long chunks.
50g butter
2 tablespoons honey
3 chopped cloves garlic
2 teaspoons pepper
Salt to taste
1 tablespoon fresh dill to garnish
This recipe is low carb and gluten free.

- 237 g mini carrots
- 50 g butter
- 2 tablespoons honey
- 3 cloves chopped garlic
- 2 teaspoons pepper

Instructions
- Pre-heat oven to 180°C (350°F)
- Heat a pan with butter and wait for it to melt.
- Add garlic, salt and pepper and let it cook until fragrant
- Add honey and stir well
- Finally add the carrots and mix to combine. Let the carrots cook for 3-4 minutes.
- Line a baking tray with parchment paper and pour carrots with the butter mixture and let it cook in the oven for 20 minutes
- Once golden brown, garnish will chopped dill and serve immediately.
