Honey garlic butter roasted carrots

These mini oven roasted carrots are the perfect side to your roast this festive season. Incredibly delicious with flavours to take it to a whole new level.
Be sure to try these, they’ll be a hit.

Ingredients:
237g mini carrots – I got these from Sainsburys. If you can’t get hold of them, just use regular sized ones and slice into small long chunks.
50g butter
2 tablespoons honey
3 chopped cloves garlic
2 teaspoons pepper
Salt to taste
1 tablespoon fresh dill to garnish

This recipe is low carb and gluten free.

Instructions
  1. Pre-heat oven to 180°C (350°F)
  2. Heat a pan with butter and wait for it to melt.
  3. Add garlic, salt and pepper and let it cook until fragrant
  4. Add honey and stir well
  5. Finally add the carrots and mix to combine. Let the carrots cook for 3-4 minutes.
  6. Line a baking tray with parchment paper and pour carrots with the butter mixture and let it cook in the oven for 20 minutes
  7. Once golden brown, garnish will chopped dill and serve immediately.
