Baileys Mithai – Indian sweets

This weekend many Hindu households have been cooking away for Diwali. By the end of it, houses are filled with buckets of sweet and savoury goodies to be shared by the family. This year is most people around the world are going to be celebrating Diwali differently #covid. Every family celebrates the Diwali season in their unique way. My uncles like to have a little boozy celebration and these Baileys Mithai balls (Indian sweets) are made for them. I added a twist to my regular mithai recipe and they turned out really good!

Ingredients:
Milk powder – full fat preferably to get the rich mithai (Indian sweets) taste.
Sugar – I used regular granulated.
Saffron – A few strands to bring out the flavour but not to overpower the Baileys taste.
Ghee – just enough for the silky glow.
Baileys – go easy on this, you don’t want to go too heavy and add too much.
Chocolate drizzle – I just melted cooking chocolate and added a dash of baileys to it, this will make the balls even more special in taste.
Sprinkles – Optional to do this, adds a prettier look to the balls.

Instructions
  1. Add water, saffron and sugar into a pan
  2. Let it boil for 7-8 minutes and keep stirring. You will notice the syrup getting thicker. This means the syrup is ready to use. Be very careful and try not to over cook. Keep it on medium heat.
  3. Add milk powder into a bowl and add the ghee
  4. Add Baileys into the milk powder bowl
  5. Add a large serving spoon of syrup each time to the milk powder bowl. Keep mixing to make a silky dough. Keep adding the syrup as you need. You may have some of the syrup left over
  6. Get a small piece of dough and add a chocolate chip inside of it. Keep making the balls and place on a board
  7. Start to melt the chocolate in a bowl over boiling water. Once it's ready, get the melted chocolate and drizzle over the mithai balls. Cover the balls in as much chocolate as you like.
  8. Decorate the balls in sprinkles, this is optional
  9. Let the mithai balls rest for an hour. Once the chocolate is dry you can move them into a container and refrigerate overnight. These stay in the fridge for up to 5-7 days.
  10. Enjoy once chilled!
