Ingredients
- 1 1/2 cups whole wheat flour
- 1/2 cup oats
- 2 teaspoons apple cider vinegar
- 1 3/4 cups dairy free milk
- 1/4 cup coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil melted
- 2 tablespoons maple syrup
- 2 teaspoons vanilla essence

Instructions
- Combine the apple cider vinegar and non-dairy milk to form "buttermilk." Set the mixture aside.
- In a mixing bowl, mix together all the dry ingredients.
- Next add the remaining wet ingredients--the coconut oil, maple syrup, vanilla extract and thickened buttermilk--into the dry ingredients. Stir until just combined, being careful not to over-mix.
- Let the mixture set for 30 minutes
- Heat your waffle maker and grease with cooking spray
- Cook your waffles and enjoy with your favourite toppings!
