  1. Combine the apple cider vinegar and non-dairy milk to form "buttermilk." Set the mixture aside.
  2. In a mixing bowl, mix together all the dry ingredients.
  3. Next add the remaining wet ingredients--the coconut oil, maple syrup, vanilla extract and thickened buttermilk--into the dry ingredients. Stir until just combined, being careful not to over-mix.
  4. Let the mixture set for 30 minutes
  5. Heat your waffle maker and grease with cooking spray
  6. Cook your waffles and enjoy with your favourite toppings!
