After posting this on my stories last week, I was overwhelmed with the amount of recipe requests. So here it is – a light refreshing salad with quinoa, crisp bistro, cucumber, sweet cherry tomatoes & pan-fried paneer cheese.

Ingredients
- 226 g Paneer Indian Cooking Cheese cut into slices as desired
- 2 tablespoons tandoori powder
- 1 teaspoon salt
- 1 teaspoon ground turmeric
- 1 teaspoon chopped ginger
- 1 teaspoon chopped garlic
- chilli powder to taste
- 1 tablespoon greek yogurt
- 150 g cooked quinoa
- ½ cucumber sliced
- handful cherry tomatoes
- handful bistro salad
- 1 tablespoon french vinaigrette
- salt and pepper to taste

Instructions
- Mix all the marinade ingredients together to form a paste. Then coat your paneer slices with the marinade.
- In a griddle add 1 tablespoon of oil and cook the paneer slices until soft. You will see each side slightly charred. Set aside.
- Layer the cucumber, tomatoes, bistro salad and quinoa at the bottom of your plate, then drizzle with some dressing. Then top with your griddle cooked paneer. Enjoy!
