After posting this on my stories last week, I was overwhelmed with the amount of recipe requests. So here it is – a light refreshing salad with quinoa, crisp bistro, cucumber, sweet cherry tomatoes & pan-fried paneer cheese.

Instructions
  1. Mix all the marinade ingredients together to form a paste. Then coat your paneer slices with the marinade.
  2. In a griddle add 1 tablespoon of oil and cook the paneer slices until soft. You will see each side slightly charred. Set aside.
  3. Layer the cucumber, tomatoes, bistro salad and quinoa at the bottom of your plate, then drizzle with some dressing. Then top with your griddle cooked paneer. Enjoy!
